SPICY LAMB MEATBALLS WITH BEANS
Serves 4
- 500g lamb mince
- 1 onion, peeled and finely chopped
- 1tbsp Moroccan seasoning
- Small handful flat-leaf parsley, finely chopped
- 1 chilli, de-seeded and finely chopped
- Salt and pepper
- 1tbsp olive oil
For the beans:
- 1 onion, peeled and chopped
- 2 garlic cloves, peeled and chopped
- 1 tin tomatoes
- 1 tin cannellini beans
- 1 small tin chickpeas
- For the meatballs, mix the mince, onion, seasoning, parsley and chilli together in a bowl. Season, and using your hands, shape the meat into small meatballs.
- Fry the meatballs, turning regularly, for 5-7 minutes, or until cooked through and browned all over.
- For the beans, heat the olive oil in a frying pan and fry the onions and garlic for 2-3 minutes, or until softened. Stir in the tomatoes and cook for a further 3 minutes. Stir in the beans and chickpeas and simmer for 10 minutes. To serve, spoon the bean mixture into bowls and top with the meatballs.
